This pudding recipe is honestly addicting. I made it for Michael because he had never had it before and he couldn’t stop eating it off of the stove! It’s good hot or cold. You can even add 1/3 cup cocoa powder to the dry ingredients in the beginning to make it a chocolate pudding! We prefer the chocolate pudding , but give both a try!
First, add the sugar, salt and cornstarch (and cocoa if you’re making chocolate pudding) to the double boiler. Mix the dry ingredients together. I just used a pot filled with a couple inches of water, set a glass bowl on top and kept the water on a low boil. This technique ensures that you don’t scorch the pudding on direct heat. The double boiler gives it a slow and consistent heat.
Next, slowly add the cream or milk while whisking. Whisk The mixture often while preparing the egg. You should continue to whisk often until it is slightly thickened and hot. Be Patient!
Separate the yolks from the egg whites. I keep the egg whites and put them back in the fridge for breakfast. Beat the egg yolks in a separate, small bowl. Slowly add a little of the hot milk mixture from the double boiler into the egg yolks while mixing. This will keep the eggs from turning into a solid.
Slowly add the egg yolk mixture to the milk mixture on the double boiler while whisking. Again, make sure you take your time pouring and whisking the mixtures together. You don’t want to end up with scrambled eggs!
Whisk until the pudding is thick with small bubbles forming on the top. This could take around 30 minutes to reach its thickness so don’t give up! Remove from the heat. Add in the vanilla and butter. Cool the pudding and enjoy! Or you could eat it right off the stovetop, too.

- 1 tsp. vanilla
- 1 Tbsp. butter
