Start by adding the oil to the pan and cooking the cut up chicken over medium heat. While chicken is cooking prepare the peppers and onion. Once the chicken is fully cooked place the peppers into the pan and sauté them for 2-3 minutes. Next, add in the onions and crushed red pepper and sauté them for 2-3 minutes as well.
Once all the vegetables are sautéd, you will then add in: the pineapple, pineapple juice, ketchup, vinegar, and soy sauce. Once all ingredients are put in the pan, stir them all together.
Put a cover over the pan and allow it to simmer on low heat for 15 minutes. Best served over white rice!
Ingredients:
- 1 tbsp. oil
- 1 lb. chicken, cut into one-inch cubes
- 1 cup green pepper, chopped
- 1 cup Tri-colored peppers, chopped
- ½ onion, chopped
- ¼ tsp. crushed red pepper
- 1 cup cubed pineapple
- ¼ cup pineapple juice
- 2 tbsp. apple cider vinegar
- ¼ cup ketchup
- 2 tbsp. soy sauce
- White rice
Instructions:
Pour the oil into a frying pan and cook the chicken in the pan on medium heat until done. Put the peppers into the pan and sauté for 2-3 minutes. Add the onions and the crushed red pepper and sauté for 2-3 minutes. Add the pineapple, pineapple juice, vinegar, ketchup and soy sauce to the pan. Stir the ingredients together. Put the cover on the pan and let it sit on low heat for 15 minutes. Serve over cooked white rice.
