Shrimp Chowder

Serves 8 (2 quarts) and Gluten free!  This is a hearty, comfort chowder that is best for those cold winter days.

Ingredients:

  • 4 small red potatoes, cubed
  • ¼ cup butter
  • 3 stalks celery, chopped
  • 2/3 cup finely onion, chopped
  • 1 (8oz package) cream cheese
  • 2 cups milk
  • 1 pound frozen shrimp, thawed and peeled
  • ¼ cup dry white wine
  • ½ tsp. salt
  • 6 slices of bacon, chopped
  • ¼ tsp. black pepper

Instructions:

Boil the cubed potatoes until tender, drain and keep covered. Melt butter in a large pot. Add the chopped bacon and cook until slightly crispy. Add celery and onion and cook on medium heat until softened. Turn heat down to medium-low. Add the milk and cream cheese. Cook and stir until smooth and creamy. Add potatoes, shrimp, wine and salt to the pot. Cook on medium heat until heated through, about 10-15 minutes, stirring occasionally.
